Daily Update: 03 February, 2021

Let’s get two blog posts in as many days, this one being the review of February 03, written on Thursday, February 04.

Per my last post about the late-night conference in Sydney, Australia, and computer code stuff, I went to bed late but I had to call into an 8am meeting that I dozed on-and-off through. But, that meant I couldn’t use it as an opportunity to exercise. Instead, I used my 2pm meeting. So, I finally got an elliptical exercise in, first time in two weeks. And so my steps are finally almost at 10k.

I did end up snacking throughout the day, but on pretty low-calorie fruit. I also used up the rest of my open pound of tofu and made a dozen Thai-Vietnamese spring rolls. Basically, they’re the normal ones you’d expect to get at a Vietnamese restaurant: Uncooked, made with rice paper wrappers, with various vegetables in it and maybe a shrimp or tofu (I used tofu). It has a Thai twist in how the tofu is marinated, but the real primary Thai twist is the dipping sauce, which I did not make because I don’t like mayonnaise. So, these end up being an extremely healthy vs filling snack – as in, they are 45 calories, have a macros split of 25 / 50 / 25 :: fat / carbs / protein, come in at 45 calories each, and yet after just one or two, you feel full. If you eat them slowly enough. That’s also the new recipe of this week. Oh, and the bf likes them, probably more than I do, so it’s a healthy snack for both of us. Now I just have to wait for my Thai basil to grow in so I can include that in the wrap.
