Daily Update: 02 July, 2022

Best laid plans …

So, first off, the melon is a carry-over from yesterday, which I shouldn’t’ve done, but I had already made the call to do it. Still, I could’ve gotten inside my carbs limit today (though not for the week), except I copy-pasted the wrong dinner when planning it. The last time I made this bison dish, I tried using “healthy noodles” which are a carb alternative and have practically no calories and are zero carbs. We decided that it worked for something like a tomato sauce, but not so much for this, we should stick with quinoa. So, the dish went from a planned 31 grams of carbs to an actual 58 grams, which put me over on the day and kept me over on the week. Sigh.

However, I managed to make it through the day without napping and without eating anything that wasn’t planned, so no cheating. It seems like that should be easy, but it has not been for me this week.

I also managed to work out, not once but twice. I’m not sure if I have COVID-lite (and not detectable in a home test) or if it was the month spent at sea level and not home at 6200 ft, but I am lacking much stamina these days. I was ready to collapse on the elliptical after 20 minutes, but I played to my OCD and forced myself to keep going to 200 calories so I got an extra 2.5 minutes on it. Same thing with bicycling, though that was already an issue well before we went to Australia and the boyfriend got COVID. But also same with walking, where I’m more out of breath than I usually am at certain points in the short walks I’ve been doing. I’m scared to walk down by the mailboxes and get another VO2 max reading, but I haven’t gotten a reading since I was in Australia at sea level. So, I should probably do that this week.

I also spent quite a bit of time doing some template updating for tracking and infographics. And got work done. And I did some meal planning.

With that said, there are certainly worse ends to “first week” in this journey.
